Ingredients
- 4 x salmon steaks fresh basil oil (qv) mussel and saffron vinaigrette (qv) mixed salad leaves to serve
Directions
- Marinate the salmon in basil oil overnight.
- Char grill on a griddle pan for 810 min turning once.
- Toss a little mussel and saffron vinaigrette with the salad leaves.
- Gently heat the remaining dressing then stir in the mussels tomatoes courgettes and chives.
- Place dressed leaves on each plate top with a salmon steak and spoon round the vinaigrette.
- Serves 4
