Ingredients
- 2 lb white fish (mahi mahi is an excellent choice)
- 1 c. lime juice
- 1 x clove of crushed garlic
- 2 x red peppers, diced
- 2 x finely diced jalapeno peppers (to your preference)
- Â Â Salt and pepper to taste
- 1 lrg onion, finely minced
- 2 stalk celery, finely minced
- Â Â Bunch of finely minced cilantro
- 2 x lettuce leaves per plate
- 16 x corn on the cobs cut into 2 inch pcs cooked as usual
- 3 x or possibly 4 sweet potatoes, boiled and peeled
- 8 x lemons cut in half and placed in center of table
Directions
- Wash and de-bone fish and cut in 1/2 inch chunks Season with lemon juice, garlic, salt and pepper. Let it marinade for 1 hour Add in onion, jalapeno and red pepper, celery and cilantro. Marinade for 1 more hour Serve on a bed of lettuce and add in two pcs of corn on the cob and a portion of the sweet potatoes.
