Cauliflower Pasta Recipe

A quick and easy pasta with veggies, the kids like. Cauliflower is full of vitamin C.

Ingredients

  • 1 lbs pasta (any type)
  • 3 cups chopped cauliflower
  • 2-3 tbps olive oil
  • 1/4-1/2 cup parmaesan cheese, to taste
  • 1/2 black olives
  • jucie of half a lemon
  • salt & peppe to taste

Directions

  1. As pasta water boils, clean and chop cauliflower. Cauliflower should be in very small pieces. Don't try to make florets, just chop.
  2. Add pasta to boiling water. Half way through, about 5 minutes left, add cauliflower to water. Reserve 1/2 cup or so of the pasta water.
  3. Drain well and return to pot.
  4. Add olive oil, parmaesan, salt, pepper, lemon juice and olives.
  5. If it is a bit dry, add some of the reserved pasta water
  6. Stir well and serve.
