Directions

  1. Ask butcher to cut rabbit into joints.
  2. Slice onions and mushrooms.
  3. Heat half of the butter with half of the oil and begin browning rabbit, a few at a time. Season them with salt and pepper as they brown. Add in more butter and oil as needed, place pcs in a casserole dish.
  4. Add in any remaining butter and oil to the pan and saute/fry onions lightly. Add in mushrooms, oregano, garlic, and wine to the pan and cook a few min. Add in chicken broth, stir till boiling, pour over rabbit.
  5. Bring to a simmer, cover, and simmer gently for 20-30 min. Remove rabbit pcs to a hot platter.
  6. Stir sauce, taste for seasoning, and cook for a few min, uncovered, to reduce. Add in cream and continue to reduce.
  7. Thicken slightly with cornflour or possibly cream of chicken soup mix if you like, and swirl in some additional butter.
  8. To serve:Put cooked, liquid removed spaghetti in center of a large warmed deep platter. Pour sauce over. Surround with rabbit pcs and sprinkle with parsley.
