Carrot Souffle Recipe

Ingredients

  • 1 3/4 lb carrots, peeled and minced
  • 1 c. white sugar
  • 1 1/2 tsp baking pwdr
  • 1 1/2 tsp vanilla extract
  • 2 Tbsp. all-purpose flour
  • 3 x Large eggs, beaten
  • 1/2 c. margarine, softened
  • 2 tsp confectioners' sugar

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large pot of boiling water, cook the carrots till very tender. Drain, and transfer to a large mixing bowl. While carrots are hot, use an electric mixer to beat with sugar, baking pwdr, and vanilla extract till smooth. Fold in the flour, Large eggs, and margarine. Transfer to a 2 qt baking dish. Bake 1 hour in the preheated oven, or possibly till top is golden. Sprinkle lightly with confectioners' sugar before serving
