Carrot Salad

A very quick and easy salad that goes well on a hot day.

Ingredients

  • 1 lb shredded raw carrots
  • 1 thinly sliced bunch of radishes
  • 2 Tb chopped parsley
  • 1 Tb chopped dill
  • 4 Tb good quality extra virgin olive oil
  • 1 Tb prepared horseradish
  • 2 ts Dijon or other grain mustard
  • 1 Tb + 1 ts honey
  • 1 Tb + 1 ts red wine vinegar
  • Salt & Pepper to taste

Directions

  1. In a large bowl mix horseradish, mustard, honey, and red wine vinegar and slowly whisk in the olive oil.
  2. Add the carrots, radishes, parsley and dill, season with salt and pepper and mix.
