Ingredients

  • 1 1/2 c. Veg. oil
  • 2 c. Grated carrots
  • 1 c. Minced nuts
  • 1 tsp Cinnamon
  • 1 tsp Soda
  • 1 c. White sugar
  • 1 c. Dark brown sugar
  • 2 c. Self rising flour
  • 4 x Large eggs
  • 1 pch Salt
  • 1 pkt (8 ounce) cream cheese
  • 1 tsp Vanilla
  • 1 1/2 stk melted butter
  • 1 c. Minced nuts
  • 1 pkt Powdered sugar

Directions

  1. Cream oil and sugar. Add in Large eggs one at a time. Add in carrots, flour, salt, cinnamon and soda. Mix in nuts. Bake at 30-35 minutes. in 2 X 9 layers.
  2. ICING: Mix till smooth. Spread on cold cake.
