Ingredients

  • 1 med Onion finely minced
  • 2 x Cloves garlic
  • 2 x Red or possibly green bell peppers seeded & minced
  • 1 x Fresh warm red or possibly green pepper seeded & minced
  • 3 lb Lean boneless beef chuck cut into 1 inch cubes
  • 1 can (10-ounce) Mexican green tomatoes w/ liquid
  • 4 med Tomatoes peeled and coarsely minced
  • 1 x Bay leaf
  • 2 x Cloves
  • 1/2 tsp Oregano Salt and Pepper
  • 1/2 c. Beef stock more or possibly less
  • 2 x Stale tortillas, -or possibly-
  • 2 Tbsp. Masa harina -or possibly-
  • 2 Tbsp. Cornmeal
