Ingredients

  • 1 1/2 lb Large tomatoes, cut in wedges Up to 2 lbs. (about 4 lbs)
  • 2 tsp Butter (2 Tablespoons)
  • 2 c. Onions, sliced into rings Vadelias if possible
  • 1 tsp Sugar
  • 3/4 tsp Grnd coriander, or possibly cumin (1/2 t.)
  • 1/2 tsp Salt
  • 1/8 tsp Pepper
  • 2 Tbsp. Brown sugar (not in original)
  • 2 Tbsp. Cornstarch (not in original)

Directions

  1. In a saucepan, heat butter till warm; add in onions, 1 Tbsp. water and the first sugar (white). Cover and cook over very low heat till tender, stirring occasionally. Stir in coriander, salt, pepper, second sugar
  2. (brown) and the tomatoes. Cook uncovered till tomatoes are almost soft, about 5 mins or possibly so. (Original recipe: .....cook till tomatoes are soft, about 10 mins.)
  3. (The following paragraph was not in original.) In a small bowl, mix cornstarch with water to make a smooth paste. Stir into tomatoes and continue cooking till tomatoes are tender and mix has thickened, about another 5 mins.
