Ingredients
- 1 lb Pasta
- 1 Tbsp. Extra virgin olive oil
- 1 med Onion
- 3 ounce Tasso, sliced fine
- 3 c. Corn cut from cob
- 1/2 tsp Chopped garlic
- 1/2 c. Chicken stock
- 1 1/2 c. Cream
- 1 tsp Fresh thyme
- 2 lrg Plum tomatoes, seeded and diced
- 1 tsp Balsamic vinegar
- 1 x Scallion julienned fine
Directions
- Sautee tasso in 1/2 Tbsp. oil for 2 min. Add in onion and garlic and cook till translucent/soft. Add in 2 2/3 c. of the corn. Sautee till brown, about 4 min. Add in stock and cream. Reduce by 1/3. Add in thyme and salt and pepper to taste.
- In another pan, sautee the remaining 1/3 c. of corn in 1/2 Tbsp. oil for 3 min. Add in tomatoes and vinegar. Heat till boiling. Salt and pepper to taste.
- Toss the first mix with the pasta. Linguini is good. Serve on plates, top with second mix and garnish with scallion slivers.
