Directions

  1. Sautee tasso in 1/2 Tbsp. oil for 2 min. Add in onion and garlic and cook till translucent/soft. Add in 2 2/3 c. of the corn. Sautee till brown, about 4 min. Add in stock and cream. Reduce by 1/3. Add in thyme and salt and pepper to taste.
  2. In another pan, sautee the remaining 1/3 c. of corn in 1/2 Tbsp. oil for 3 min. Add in tomatoes and vinegar. Heat till boiling. Salt and pepper to taste.
  3. Toss the first mix with the pasta. Linguini is good. Serve on plates, top with second mix and garnish with scallion slivers.
