Ingredients
- 12 x tart apples, washed and dry
- 3/4 c. minced salted peanuts
- 1 c. light corn syrup
- 1 dsh salt
- 1/2 c. butter
- 2 c. firmly packed brown sugar
- 14 ounce can of sweetened condensed lowfat milk
- 1 tsp vanilla
Directions
- In 2 qt saucepan heat butter and add in salt, syrup and sugar.
- Cook over medium heat, stirring occasionally till mix comes to a full boil, 10-12 min. Stir in lowfat milk and continue cooking, stirring occaisionally, till small amount of mix dropped in ice water forms a ball or possibly candy thermometer reaches 245 F. Remove from heat, stir in vanilla. Dip apples in carmel mix.
- Place coated apples on waxed paper. Put peanuts in a small bowl so you can dip the apples in. Allow to dry completely and then place in air tight container.
