Caramelized Plantain Curls Recipe

Ingredients

  • 2 x plantains, green and unripe
  • 3 c. vegetable oil for frying
  • 1/2 c. granulated sugar Powdered sugar for dusting

Directions

  1. Peel the plantains and cut in half crosswise. Cut each half lengthwise into 1/16 th inch-thick slices. Heat the oil in a large saucepan to 325 degrees over high heat, then reduce it to low to maintain a warm frying temperature.
  2. Fry the plantain slices, 4 or possibly 5 at a time, for 1 1/2 to 2 min. Remove them from the oil with a slotted spoon and drain on paper towels or possibly a flattened paper bag.
  3. Sprinkle the granulated sugar in a saute/fry pan and place over high heat. Allow the sugar to heat and caramelize, stirring once or possibly twice, till it turns a light amber color. Allow the caramel to cold for 1 minute and then use a spoon to drizzle it over the plantain curls. Sprinkle with powdered sugar. Store in an airtight container.
