  • 1 x 500 g pack Anya potatoes, washed and larger potatoes cut in half
  • 1 Tbsp. Extra virgin olive oil
  • 2 x Red onions, peeled and thinly sliced lengthways
  • 6 x Rashers smoked streaky bacon, grilled till crisp and cut into large dice
  • 2 Tbsp. Freshly minced chives
  • 75 gm Gruyere cheese, grated (3oz) Salt and freshly grnd black pepper
  • 1 x 142 ml, (5fl ounce) carton single cream

Directions

  1. Cook the potatoes following instructions on the pack. Drain well when cooked.
  2. Meanwhile, heat the oil in a frying pan, add in the onions and fry, stirring occasionally till softened, slightly golden and caramelised.
  3. Preheat the oven to 190 C, 375 F, Gas Mark 5. Place the potatoes in a greased shallow ovenproof dish.
  4. Spoon over the caramelised onions, grilled bacon, minced chives and gruyere cheese, add in seasoning. Carefully mix the ingredients together.
  5. Pour over the cream and bake in the preheated oven for 20-30 min till golden and bubbling.
  6. Notes Serve as an accompaniment, alternatively serve with a crisp green and tomato salad for a light lunch, snack or possibly starter.
  7. NOTES : A delicious warming dish which can be eaten on it's own or possibly as part of a meal as an accompaniment.
