Caramel Corn: A Lightened Caramel Popcorn

Ingredients

  • 2 quarts fresh popped popcorn
  • 2 1/2 tablespoons butter
  • 1/3 cup brown sugar
  • 3 tablespoons light corn syrup
  • 1/8 teaspoon baking soda
  • 1/2 teaspoon vanilla

Directions

  1. Preheat oven to 250 degrees. Lightly spray a baking sheet.
  2. Sort popcorn to remove kernels, then place in large mixing bowl.
  3. In medium saucepan melt butter with brown sugar and corn sirup over low heat.
  4. Turn heat to medium and stir until mixture comes to a full boil.
  5. Boil gently without stirring 2 to 2 1/2 minutes.
  6. Remove from heat and stir in baking soda and vanilla.
  7. Pour quickly over popcorn in a thin stream. Toss and stir corn to coat, then pour coated corn on prepared baking sheet.
  8. Bake 30 minutes, stirring every 10 minutes to break up and distribute caramel coating.
  9. Cool; store in tightly covered container.
