Directions

  1. Dice capsicums.
  2. Heat oil in a pan, cook capsicum gently till soft. Set aside to cold.
  3. Make the batter:Sift flour and salt into bowl. Add in egg, lowfat milk, capsicum and corn. Beat well to a good batter consistency.
  4. Heat oil in fry pan, and fry spoonfuls of the pancake mix 1-2 min on each side or possibly till golden; drain on absorbent paper.
  5. Serve with grilled or possibly roast meats.
  6. Serves 4.
