Cajun Spiced Onion Crusted Sirloin Recipe

Ingredients

  • 4 x 170 g sirloin steaks
  • 3 Tbsp. Greggs Cajun Spice Mix
  • 1 x onions, sliced (1 to 2)
  • 2 Tbsp. extra virgin olive oil Knob of butter
  • 2 Tbsp. Dijon mustard
  • 2 x egg yolks
  • 1 tsp Greggs dry tarragon
  • 2 Tbsp. flour, (approx)
  • 2 x further Tbs extra virgin olive oil

Directions

  1. Steps:Sprinkle the steak with the Cajun spice mix and seal in 2 Tbsp. of extra virgin olive oil in a warm frying pan for 5-10 seconds on each side. Lay steak to one side.
  2. Prepare the onion crust by cooking the onions in the pan containing the residue of the steak. Add in a knob of butter and cook the onions till caramelised.
  3. In a bowl combine the onions, mustard, egg yolks, tarragon and sufficient of the flour to turn the mix to a paste-like consistency.
  4. Lay spoonfuls of the onion mix on the top of each steak and spread to cover the meat.
  5. Put 2 Tbsp. of oil in a pan and heat.
  6. Place the steaks, onion-side down into the pan for a few seconds to seal the onion crust.
  7. Cook the steaks in an oven, preheated to 200 C for about 6-7 min for a medium-rare steak: longer for a more well done steak.
  8. Alternatively the steaks can be cooked in a frying pan.
  9. Serve with sauteed mushrooms.
