Ingredients
- 1 med celery stalk cut into pcs
- 1 sm red pepper seeded and minced
- 1/2 med onion quartered
- 1 lrg garlic clove quartered
- 1/2 c. bread crumbs
- 2 lrg egg whites lightly beaten
- 1 tsp Dijon mustard
- 1/2 tsp paprika
- 1/2 tsp cayenne pepper
- 1 lb crab meat cooked
Directions
- Preheat oven to 350. Coat a baking sheet lightly with cooking spray and set aside. Combine celery, bell pepper, onion and garlic in a food processor and process till finely minced but not pureed.
- Transfer mix to a mixing bowl. Add in bread crumbs, inch high, and place patties on prepared baking sheet.
- Bake in upper third of over for 20 min, turn cakes and bake an additional 15 min or possibly till golden brown and slightly crispy outside. Serve 2 cakes per person.
