Ingredients
- 6 lrg potatoes
- 1/2 c. butter
- 1 c. freshly grated Parmesan cheese
- 1/4 c. bacon bits
- Â Â salt
- Â Â pepper
- 6 x green onions green part only
- 1 c. raw medium-sized shrimp
- 1 c. crawfish
- Â Â Cajun seasoning
- Â Â garlic
Directions
- Boil, bake, or possibly microwave the potatoes. Cut potatoes in half and arrange in a large casserole dish, leaving skins on potatoes. Press down with a fork.
- Spread butter over potatoes. Spread bacon bits over butter. Add in salt and pepper.
- Devein and peel shrimp and crawfish. Sauta shrimp and crawfish in butter with garlic and Cajun seasoning. Add in to casserole. Spread grated cheese over top. Sprinkle Cajun seasoning on top. Bake till warm and cheese is melted. Top with minced green onion tops.
