Ingredients

  • 1 c. Brown sugar
  • 4 Tbsp. Cornstarch
  • 1/2 tsp Salt
  • 2 c. Lowfat milk, warmed
  • 2 x Egg yolks, beaten
  • 1 Tbsp. Butter
  • 1 tsp Vanilla
  • 1 x Pie crust, cooked
  • 2 x Egg whites, beaten stiff
  • 1 pch Salt
  • 4 Tbsp. Powdered sugar

Directions

  1. In top of double boiler, combine brown sugar, cornstarch, salt and lowfat milk.
  2. Stir and keep stirring till it thickens. Add in egg yolks, keep on cooking, stirring till it thickens. Remove from heat and add in butter and vanilla; keep on stirring, pour into cooked pie crust. Combine the topping ingredients to make the meringue and spread over filling and bake in 400 degree oven for 5 min or possibly till brown.
