- 2 1/2 cups all-purpose flour

- 1 cup unsalted butter, softened
- 1 3/4 cups packed light brown sugar
- 1 tbsp. vanilla extract
- 2 large eggs, separated.
- 1 (11 oz.) package butterscotch chips, divided
- Ingredients for the butterscotch ganache:
- 3/4 cup butterscotch chips
- 6 tbsp. heavy whipping cream
- 3 tbsp. unsalted butter
- Ingredients for the chocolate ganache:
- 4.5 ounces bittersweet chocolate (I used 60%), chopped
- 1/2 cup heavy cream
- 2 tbsp butter

.%20%20I%20adapted%20this%20recipe%20from%20Annie's%20Eats%20,%20but%20I%20made%20a%20few%20(possibly)%20significant%20changes.%20%20The%20biggest%20change%20I%20made%20was%20separating%20the%20eggs,%20beating%20the%20egg%20whites,%20and%20adding%20them%20in%20separately.%20%20I%20did%20this%20to%20try%20and%20lighten%20the%20texture%20of%20the%20cake%20so%20it%20wouldn't%20be%20as%20dense%20as%20a%20brownie.%20%20The%20cake%20turned%20out%20fine%20-%20but%20I'm%20not%20sure%20how%20it%20taste's%20yet%20(you'll%20have%20a%20wait%20a%20few%20hours%20for%20the%20verdict).%20%20I%20also%20used%20my%20own%20chocolate%20ganache%20recipe%20because%20it%20hasn't%20failed%20me%20yet.%3C/p%3E%3Cp%3EButterscotch%20Blondie%20Cake%3C/p%3E%3Cp%3EIngredients%20for%20the%20butterscotch%20brownie%20cake:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3ETo%20make%20the%20cake,%20preheat%20the%20oven%20to%20350%20degrees%20F.%20%20Butter%20and%20flour%20the%20sides%20of%20two%205-inch%20round%20cake%20pans,%20and%20line%20the%20bottoms%20with%20parchment%20paper.%20%20In%20a%20medium%20mixing%20bowl,%20sift%20together%20the%20flour,%20baking%20powder,%20and%20salt.%3C/p%3E%3Cp%3EIn%20a%20bigger%20bowl,%20combine%20the%20butter,%20sugar%20and%20vanilla.%20%20Beat%20on%20medium%20speed%20until%20creamy.%20%20Scrape%20down%20the%20bowl.%20%20Beat%20in%20the%20egg%20yolks%20one%20at%20a%20time.%20%20In%20a%20smaller%20separate%20bowl,%20beat%20the%20egg%20whites%20until%20light%20and%20fluffy%20until%20stiff%20peaks%20form.%3C/p%3E%3Cp%3EGradually%20beat%20in%20the%20flour%20mixture%20on%20low%20speed%20just%20until%20combined.%20%20Then%20fold%20in%20the%20egg%20whites%20until%20well%20combined.%20%20Stir%20in%201%20cup%20of%20butterscotch%20chips%20with%20a%20rubber%20spatula.%3C/p%3E%3Cp%3EDivide%20the%20batter%20evenly%20between%20the%20prepared%20pans.%20%20Sprinkle%20with%20the%20remaining%20butterscotch%20chips.%20%20Bake%20for%2030%20to%2040%20minutes%20or%20until%20a%20toothpick%20inserted%20in%20the%20center%20comes%20out%20clean.%20%20Transfer%20the%20pans%20to%20a%20wire%20cooling%20rack%20and%20allow%20to%20cool%20completely%20before%20carefully%20removing%20from%20the%20pans.%3C/p%3E%3Cp%3ETo%20make%20the%20butterscotch%20ganache:%3C/p%3E%3Cp%3ECombine%20the%20cream%20and%20the%20butter%20in%20a%20small%20saucepan.%3C/p%3E%3Cp%3EWarm%20over%20medium-high%20heat%20until%20the%20mixture%20is%20almost%20boiling.%3C/p%3E%3Cp%3EPlace%20the%20butterscotch%20chips%20in%20a%20small,%20heatproof%20bowl.%3C/p%3E%3Cp%3EPour%20the%20cream%20mixture%20over%20the%20butterscotch%20chips%20and%20allow%20to%20sit%20for%2030%20seconds.%20%20Stir%20until%20smooth.%3C/p%3E%3Cp%3ETo%20make%20the%20chocolate%20ganache:%3C/p%3E%3Cp%3EIn%20a%20small%20saucepan,%20bring%20cream%20to%20a%20boil%3C/p%3E%3Cp%3EPlace%20chopped%20chocolate,%20butter%20and%20corn%20syrup%20in%20a%20small%20bowl%20and%20pour%20hot%20cream,%20through%20a%20sieve,%20over%20the%20chopped%20chocolate.%3C/p%3E%3Cp%3EStir%20until%20smooth%20and%20creamy%20in%20texture.%3C/p%3E%3Cp%3ELet%20stand,%20stirring%20occasionally%20until%20slightly%20thickened.%3C/p%3E%3Cp%3EPour%20over%20the%20cooled%20cake,%20slice%20and%20serve.%3C/p%3E%3Cp%3ETo%20assemble%20the%20cake,%20place%20one%20of%20the%20cake%20layers%20on%20a%20wire%20rack%20with%20a%20sheet%20of%20wax%20paper.%20%20Drizzle%20butterscotch%20ganache%20over%20the%20top%20so%20that%20it%20drips%20over%20the%20edges%20of%20the%20cake.%20%20Drizzle%20with%20a%20small%20amount%20of%20chocolate%20ganache%20as%20well.%20%20Lay%20the%20remaining%20cake%20layer%20on%20top%20of%20the%20first%20and%20top%20with%20remaining%20butterscotch%20and%20chocolate%20ganache%20so%20that%20it%20drips%20over%20the%20edges.%20%20Transfer%20the%20cake%20to%20a%20serving%20platter.%3C/p%3E){kind=link}
