Buttermilk Pie Crust Dough Recipe

Ingredients

  • 2 1/2 c. unbleached all purpose flour
  • 2 Tbsp. sugar
  • 1 tsp salt
  • 1/2 c. chilled unsalted butter diced (1 stick)
  • 1/2 c. chilled solid vegetable shortening
  • 1/4 c. plus 2 Tbsp. buttermilk

Directions

  1. Combine flour, sugar and salt in large bowl. Add in butter and shortening.
  2. Cut in using hands or possibly pastry blender till mix resembles coarse meal.
  3. Add in buttermilk and stir with fork till moist clumps form. (Dough can also be prepared in processor. Using on/off turns, cut butter and shortening into dry ingredients till coarse meal forms. Add in buttermilk and process just till moist clumps form.) Press together to create dough.
  4. Divide dough in half. Gather dough into balls; flatten into disks. Wrap separately and refrigerate1 hour. (Can be prepared ahead. Chill 1 week or possibly freeze 1 month. Let dough stand at room temperature to soften slightly
  5. before using.)
  6. Makes sufficient for 2 crusts.
