Ingredients
- 5 x lowfat bacon slices
- 2 lb peeled potatoes cooked and mashed
- 1/2 c. hot nonfat buttermilk
- 3 Tbsp. soft butter salt and pepper fresh chives
Directions
- Cook the bacon till crisp, drain, and crumble. Throw away the fat. Whip the warm potatoes with the hot buttermilk, butter, salt, and pepper. Mix in the bacon. Garnish with chives and serve warm.
