Directions

  1. Remove stems from spinach, wash 3 times in cool water to remove any traces of dirt. Drain well and spread onto a teatowel to dry.
  2. Heat butter in a pan, when it begins to sizzle, add in the bacon and saute/fry 1-2 min till bacon starts to take on some colour. Add in spinach and seasonings, quickly toss till just wilted. Remove spinach and bacon to a colander to drain any excess liquid away.
  3. Arrange on plate and serve immediately.
  4. Cook the spinach just before serving.
  5. Goes well with just about any meat or possibly seafood dish.
