Butter Free Almond Crunch Pear Muffins Recipe

This is a healthy muffin which has a lovely soft texture inside and a nice crunchy topping from the almonds, the combo is awesome!

Directions

  1. Sieve the flour, powder and soda into a mixing bowl. Add the nutmeg and salt and mix well.
  2. In a separate bowl, beat the egg and mix in the yoghurt, sugar, oil, vanilla and pear.
  3. Gradually pour the egg mixture into the dry mixture and fold until everything is blended in.
  4. Pour into a greased muffin tray, sprinkle the almonds over the top of each one and bake at 180 degrees C for about 40 minutes.

    These muffins look very promising. I may just have to try them soon...however I was thinking of using some apples that have been in the fridge a little longer than usual. I'm sure these too can be a great substitute?!? Thanks for sharing a recipe in consideration of healthier eating choices.

      Yes, substituting with apples would be fine - and they said like they are very ripe which is perfect! Let me know how they turn out. You might not need as much sugar if the apples you have are quite sweet.
