Butter Baked Cod with Lemon and Capers

This is a baked cod recipe that's just plain yummy. Nothing fancy just good. Lots of butter, but you can use less or a butter substitute.
Even my 7yr old likes this recipe.

Goes Well With: baked potato, baked french fries, Rice Pilaf, cous cous, mac & cheese, grilled and steamed veggies

Ingredients

  • 2 lbs Cod fillets
  • 1-2 sticks of melted butter ( up to you )
  • 1 lemon sliced very thinly
  • salt and pepper to taste
  • paprika
  • Lemon pepper (opt)
  • approx 3 tsp capers (i never measure)
  • fresh flat leaf parsley, chopped

Directions

  1. Preheat oven to 375
  2. Lay cod fillets in a baking dish and pour melted butter over fish making sure it gets under the fish.
  3. sprinkle with salt, pepper and paprika
  4. Lay lemon slices over fish
  5. Then sprinkle with capers and parsley
  6. Cover with foil and bake for 10 mins
  7. remove foil and bake for 15 to 20 mins more till fish is cooked and flakes. (cooking time depends on size of you fillets)
