Bulgur Pilaf With Dates, Dried Apricots, And Toasted Walnut Recipe

  • 2 Tbsp. extra virgin olive oil
  • 1 c. minced onion
  • 2 x garlic cloves chopped
  • 2 c. coarse or possibly medium bulgur (available at natural foods stores and supermarkets)
  • 1/2 c. minced pitted dates
  • 1/2 c. minced dry apricots
  • 1 x cinnamon stick broken in half
  • 2 tsp curry pwdr
  • 2 can low-salt chicken broth - (14 ounce ea)
  • 1/2 c. minced green onions
  • 1/2 c. coarsely-minced walnuts toasted

Directions

  1. Heat oil in heavy large saucepan over medium heat. Add in onion and saute/fry till golden brown, about 5 min. Add in garlic; stir 1 minute. Add in bulgur and saute/fry 5 min. Stir in dates, apricots, cinnamon stick, and curry pwdr. Add in broth; bring to boil.
  2. Reduce heat to medium-low; cover and simmer till bulgur is tender and broth is absorbed, about 15 min. Stir in green onions. Season to taste with salt and pepper. Transfer pilaf to bowl. Sprinkle with walnuts and serve.
  3. This recipe yields 8 side-dish servings.
