Ingredients

  • 2 lb pork tenderloin
  • 1/4 c. sugar
  • 1/4 c. soy sauce
  • 1 1/2 tsp cinnamon
  • 2 Tbsp. sherry
  • 1 tsp grnd ginger
  • 2 tsp dry mustard (Colman's Mustard is the best!)
  • 2 tsp lemon juice (fresh)
  • 2 Tbsp. fresh orange juice

Directions

  1. Place tenderloin in a zippy bag. Combine remaining ingredients in blender.
  2. Pour over the meat and seal bag. Marinate in fridge for 4 to 5 hrs. After marination is done, preheat oven to 325 degrees. Remove the meat and marinade and bake for 35-45 mins. Make sure the meat on the inside reaches 155 degrees. Serve w/ rolls.
  3. Yields 8 -10 servings.
