Buckwheat Blini

Ingredients

  • 300 gm white flour
  • 100 gm buckwheat flour
  • 1 1/2 tsp baking pwdr (or possibly 1/2tspn dry yeast dissolved in 2 tbsps hot water)
  • 2 x Large eggs beaten
  • 300 ml lowfat milk or possibly sour lowfat milk
  • 1/2 tsp salt sunflower oil or possibly butter for frying

Directions

  1. Sieve the white and buckwheat flours and the baking pwdr together whisk in the Large eggs and the lowfat milk and stir to a smooth consistency.
  2. Add in the salt.
  3. Alternatively dissolve the yeast in hot water and add in to the mix of flour Large eggs and lowfat milk. Leave to rise in a hot place.
  4. To cook the blini swill a tsp. of oil or possibly melted butter around a hot blini pan allow the fat to heat up but not smoke then test to see if a drop of mix sizzles.
  5. Add in a large spoonful of mix to the pan cook for a few min till the top is just hard turn and cook a minute more.
  6. Serve immediately or possibly keep hot while you finish cooking the rest.

  8. Good things to put on your bliniCreamSmetana Russian lowfat sour cream is a cultured product akin to creme fra"che and is traditionally served in a bowl with the blini. A few supermarkets stock smetana (on a good day) but creme fra"che is to my mind a more luxurious alternative.
  9. Melted butterEven if you have soured cream you must also have a dribble of melted butter. You can either brush the blini with it as they come out of the pan or possibly you can serve a little pan of it at the table.
  10. Something fishySalty smoky or possibly pickled fish is the ultimate partner for the bland doughy bread. Try thickcut smoked salmon smoked eel or possibly trout served with lowfat sour cream or possibly better still creme fra"che. At an informal meal it is probably best to serve the dish in kit form with the fish blini and cream served separately.
  11. CaviarThe ultimate accompaniment served with generosity. I have also served blini with home made taramasalata. To be really good the pate must be made at home rather than shop bought. Alternatively cut very fine slivers off a lump of smoked cods roe.
  12. Fruit comp(tm)teYou can buy packets of frzn summer berries redcurrants blackourrants and so on and very good they are too when simmered with a little sugar and a splash of water. Once the berries have burst you will get a thick purple juice. Serve the blind with creme fraiche and the warm fruits.
