Ingredients

  • 3/4 lb fava beans peeled
  • 1/4 lb guanciale minced (substitute pancetta or possibly smoked bacon)
  • 2 x artichokes cleaned, trimmed, and cut into thin slices
  • 1 x onion minced
  • 1 c. extra-virgin extra virgin olive oil
  • 3 x potatoes peeled, and sliced thinly Salt to taste Freshly-grnd black pepper to taste
  • 6 slc crusty peasant bread

Directions

  1. In a large skillet, combine the fava beans, guanciale, artichokes, and onion, drizzle with the extra virgin olive oil and cook over a medium-high flame, stirring regularly, till the ingredients are softened and browned, about 10 min.
  2. Season with salt and pepper and add in 1/2 c. water. Continue cooking for another 5 min, then add in the sliced potatoes, adjust the seasoning, cook for an additional 2 min, and remove from the heat.
  3. Preheat the grill or possibly broiler. Grill each slice of bread till it is golden on both sides and top each with some of the vegetable mix. Serve while warm.
  4. This recipe yields 6 servings.
