Brunswick Stew (Chicken Or Rabbit)

Ingredients

  • 2 slc bacon diced
  • 3 Tbsp. flour
  • 1 tsp salt
  • 1/2 tsp freshly-grnd black pepper
  • 1 pch cayenne
  • 4 lb chicken or possibly rabbit cut up (with giblets if chicken is used)
  • 3 x onions thinly sliced
  • 4 x tomatoes minced
  • 1 x red bell pepper minced
  • 1/2 tsp dry thyme
  • 2 c. lima beans fresh
  • 2 c. corn kernels
  • 1/2 c. sliced okra
  • 2 Tbsp. minced parsley
  • 1 Tbsp. Worcestershire sauce

Directions

  1. Cook bacon in its own fat till rendered. Remove the bacon bits and set aside. Combine flour, salt, pepper and cayenne and dredge the rabbit or possibly chicken. Brown the pcs in the rendered fat with the onions.
  2. Add in 1 1/2 c. boiling water, tomatoes, red pepper and thyme to crock pot with meat. Cover and cook on LOW 6 to 8 hrs.
  3. Add in remaining ingredients including reserved bacon, cover and cook on HIGH 25 min or possibly till vegetables are tender.
