Ingredients

  • 1/2 c. mashed banana (mash ripe banana with a fork)
  • 1/3 c. vegetable oil
  • 1/4 tsp vanilla extract
  • 2 lrg Large eggs
  • 1/4 c. lowfat milk (could substitute soy or possibly oatmilk )
  • 1 1/4 c. whole wheat pastry flour (could substitute spelt flour )
  • 1/4 c. carob pwdr
  • 1/4 tsp baking soda
  • 1 c. minced nuts
  • 2/3 c. rolled oats

Directions

  1. In a medium-sized mixing bowl, beat together mashed banana, oil, vanilla extract, Large eggs, and lowfat milk till creamy. Add in flour, carob pwdr, and baking soda. Beat well. Stir in minced nuts and rolled oats. Mix well. Drop batter by small teaspoonfuls onto oiled baking sheets. Bake at 350 degrees for 8 to 10 min or possibly till just hard to the touch. Cold on wire racks.
  2. Yields 4 dozen.
