%20These%20Brown%20Sugar%20Toffee%20Cookies%20make%20me%20very%20happy%20because%20they%20are%20very%20good!%3C/p%3E%3Cp%3EI%20made%20a%20batch%20a%20few%20weeks%20ago%20to%20test%20them%20out.%20I%20wanted%20to%20see%20if%20they%20would%20be%20good%20enough%20%20to%20add%20to%20our%20Christmas%20cookie%20baking%20list.%20I%20have%20a%20lot%20of%20favorite%20cookie%20recipes%20so%20it%E2%80%99s%20hard%20to%20decide%20on%20which%20recipes%20to%20bake%20for%20the%20holidays.%20I%20feel%20bad%20leaving%20cookies%20out,%20but%20I%20can%E2%80%99t%20bake%20them%20all%E2%80%A6even%20though%20I%20want%20to.%20There%20are%20only%20so%20many%20days%20in%20December.%20That%20is%20why%20I%20do%20trial%20baking%20runs%20to%20make%20sure%20the%20very%20best%20are%20chosen.%20There%20are%20a%20few%20cookie%20recipes%20that%20I%20HAVE%20to%20make%20every%20year:%20Lime%20Coconut%20Snowballs,%20Soft%20Gingersnaps,%20Red%20Velvet%20Cheesecake%20Cookies,%20and%20%20Chocolate%20Mint%20Chip%20Cookies,%20but%20I%20always%20like%20to%20add%20a%20few%20new%20cookies%20to%20the%20mix.%3C/p%3E%3Cp%3EWell,%20the%20Brown%20Sugar%20Toffee%20Cookies%20passed%20the%20test%20with%20flying%20colors.%20They%20are%20going%20on%20my%20Christmas%20cookie%20MUST%20bake%20list!%3C/p%3E%3Cp%3ESugar%20cookies%20usually%20aren%E2%80%99t%20my%20favorite%20cookies.%20There%20is%20a%20time%20and%20place%20for%20them,%20but%20I%20don%E2%80%99t%20crave%20them%20or%20bake%20them%20that%20often.%20I%20LOVE%20these%20sugar%20cookies%20though.%20They%20are%20not%20your%20typical%20sugar%20cookie.%3C/p%3E%3Cp%3EI%20used%20all%20dark%20brown%20sugar%20for%20these%20sugar%20cookies.%20I%20also%20added%20in%20a%20little%20cornstarch.%20I%20wanted%20these%20cookies%20to%20be%20soft%20and%20chewy!%3C/p%3E%3Cp%3EI%20stirred%20in%20toffee%20bits%20to%20make%20them%20extra%20special.%20Toffee%20is%20always%20a%20good%20idea!%20I%20rolled%20them%20in%20brown%20sugar%20before%20baking%20to%20give%20them%20a%20crackly%20look!%3C/p%3E%3Cp%3EThe%20cookies%20are%20everything%20I%20hoped%20they%20would%20be%20and%20MORE!%20They%20are%20soft,%20chewy,%20and%20have%20a%20nice%20brown%20sugar%20flavor.%20There%20is%20a%20hint%20of%20cinnamon%20that%20compliments%20the%20brown%20sugar.%20The%20toffee%20bits%20add%20a%20nice%20surprise%20with%20every%20bite!%3C/p%3E%3Cp%3EBrown%20Sugar%20Toffee%20Cookies%20are%20on%20our%20holiday%20baking%20list%20FOR%20SURE.%20This%20year%20and%20every%20year.%20Make%20sure%20you%20find%20time%20in%20December%20to%20bake%20these%20gems!%3C/p%3E%3Cp%3EBrown%20Sugar%20Toffee%20Cookies%3C/p%3E%3Cp%3EYield:%2026%20cookies%3C/p%3E%3Cp%3EPrep%20Time:%2010%20minutes%3C/p%3E%3Cp%3ECook%20Time:%2010-12%20minutes%3C/p%3E%3Cp%3ESoft%20and%20chewy%20brown%20sugar%20cookies%20with%20toffee%20bits.%20These%20are%20my%20favorite%20sugar%20cookies!%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3E1.%20Preheat%20oven%20to%20350%20degrees%20F.%20Line%20a%20large%20baking%20sheet%20with%20a%20Silpat%20baking%20mat%20or%20parchment%20paper%20and%20set%20aside.%3C/p%3E%3Cp%3E2.%20In%20a%20medium%20bowl%20whisk%20together%20flour,%20baking%20soda,%20cornstarch,%20salt,%20and%20cinnamon.%20Set%20aside.%3C/p%3E%3Cp%3E3.%20Place%20butter%20and%20brown%20sugar%20in%20the%20bowl%20of%20an%20electric%20stand%20mixer.%20Beat%20on%20medium%20speed%20until%20light%20and%20fluffy,%20about%203%20minutes.%20Turn%20off%20the%20mixer%20and%20scrape%20down%20the%20sides%20of%20the%20bowl%20with%20a%20spatula.%20Add%20the%20egg%20and%20vanilla%20extract,%20and%20beat%20on%20medium%20speed%20until%20combined.%3C/p%3E%3Cp%3E4.%20With%20the%20mixer%20on%20low,%20slowly%20add%20the%20dry%20ingredients.%20Mix%20until%20the%20just%20combined.%20Stir%20in%20the%20toffee%20bits.%3C/p%3E%3Cp%3E5.%20Using%20a%20spoon%20or%20cookie%20scoop,%20form%20tablespoons%20size%20balls%20of%20cookie%20dough.%20Roll%20balls%20in%20brown%20sugar.%20Place%20on%20balls%20on%20prepared%20baking%20sheet,%20about%202%20inches%20apart.%20Bake%20cookies%20for%2010%20to%2012%20minutes,%20or%20until%20lightly%20browned%20around%20the%20edges.%20Do%20not%20over%20bake.%20Cool%20on%20the%20pan%20for%202%20minutes.%20Transfer%20cookies%20to%20a%20wire%20cooling%20rack%20and%20cool%20completely.%20Store%20in%20an%20air-tight%20container%20for%20up%20to%204%20days.%3C/p%3E%3Cp%3ESlightly%20adapted%20from%20Epicurious%3C/p%3E){kind=link}
