Ingredients

  • 1/4 lb butter
  • 1 1/2 lb white onions thinly slices
  • 1 quart canned beef stock
  • 1 quart canned chicken broth
  • 1/8 tsp freshly-grnd black pepper
  • 1/2 tsp celery salt
  • 1/4 tsp salt
  • 1 x bay leaf
  • 1 Tbsp. Worcestershire sauce

Directions

  1. Slice onions thinly and saute/fry lightly in butter, till the onions become clear. Mix all ingredients together and simmer till onion is tender but not too soft, this can take about 30 min or possibly so.
  2. Ladle into bowls and sprinkle with Parmesan cheese and garlic croutons.
  3. This recipe yields 8 to 12 servings.
  4. Comments: This is a wonderful soup to make. It is simplistic, and a perfect comfort food. We have also tried cooking this soup on low in a crockpot and have had excellent results.
