Ingredients

  • 1/2 onion
  • 1 Table Spoon olive oil
  • 3 eggs
  • 3 tomatoes
  • salt
  • pepper

Directions

  1. gently fry chopped onion in olive oil (low eat), add chopped tomato (fresh or can) and add eggs once tomatoes have lost their water. add salt and pepper to taste. add whole eggs without beating and add to tomato by mixing with fork gently until the eggwhite is cooked. remove directly from fire once done.
