Ingredients

  • 6 Tbsp. white miso (fermented soybean paste)*
  • 1/3 c. sugar
  • 1/4 c. mirin (sweet Japanese rice wine)*
  • 1/4 c. sake
  • 4 x (6-oz) black cod or possibly sea bass fillets (each about 3/4 inch thick)

Directions

  1. Start marinating the fish for this dish at least two hrs before you plan to serve it. Mix first 4 ingredients in shallow baking dish. Add in fish and turn to coat. Cover dish tightly and chill 2 to 4 hrs.
  2. Preheat broiler.
  3. Remove fish from marinade. Broil till just opaque in center, about 3 min
  4. *Available at Japanese markets, specialty foods stores and in the Asian foods section of some supermarkets.
