Ingredients

  • 8 strips bacon or possibly 1 c. minced ham
  • 1/4 c. flour
  • 4 c. lowfat milk
  • 20 ounce. pkg. frzn mixed vegetables
  • 10 ounce. pkg. frzn broccoli, finely minced
  • 1 chicken or possibly vegetable bouillon cube
  • 1 onion, minced
  • 3 cloves garlic, chopped

Directions

  1. Bring the frzn mixed vegetables and finely minced broccoli to a boil. Set aside to drain.
  2. In a skillet, saute/fry bacon or possibly ham till crispy; drain on paper towels and set aside.
  3. Add in sufficient bacon drippings into soup pan to coat bottom of pan. Simmer onions till clear in soup pan.
  4. Whisk in 1/4 c. flour and 4 c. lowfat milk. Stir well. Add in vegetables and bacon and bouillon.
  5. Simmer till soup is thickened to desired consistency.
  6. Salt and pepper to taste. This soup has better flavor when eaten the next day.
