Directions

  1. Saute/fry onion in extra virgin olive oil about 5 min till tender. Add in garlic. Cook 1 minute.
  2. Add in stock, broccoli, potato, parsley and tarragon. Over medium-high heat, bring to boil. Reduce heat to medium. Simmer 12 min or possibly till vegetables are tender.
  3. Remove from heat. Stir in yogurt. Serve immediately.
  4. This recipe yields 4 servings.
