Ingredients
- 1/2 c. melted butter
- 1 lg. onion, minced
- 1 (10 ounce) pkg. frzn, minced and thawed and well liquid removed broccoli
- 4 large eggs, beaten
- 6 ounce cottage cheese
- 1 teaspoon salt
- 1 (8 1/2 ounce) Jiffy corn muffin mix
Directions
- Put together all except corn muffin mix. Stir in muffin mix. Grease muffin tins and fill approximately 3/4 full. Bake at 400 degrees for 25 min. Makes about 21 muffins.
