Ingredients

  • One small head broccoli chopped (crowns only, save stems to freeze)
  • 3 carrots, peeled, chopped
  • 2 cups vegetable broth (low sodium)
  • 1 celery stalk finely diced
  • 1/2 white onion finely diced
  • 1/2 cup melted white cheddar cheese
  • 1/2 cup 2% Milk
  • s & p to taste

Directions

  1. Add all ingredients into a lidded soup pot on low heat, stir frequently, soup will be brothy and delicious, cook for 18 minutes
  2. Serve in soup bowls and enjoy!
