Directions

  1. Stir this while bringing it to a boil. Let the brine cold.
  2. Then soak the pork in it for 10 hrs at room temperature.
  3. 6 hrs if in chops. I like to put the brine and pork in a Zip Lock bag, then suck the air out of the bag.
  4. Dry the pork well with paper towels. Now your pork is ready for any recipe.

  7. 4 c. Gin4 Tbsp Blk. pepper8 Tbsp Juniper berries5 Tbsp fine Sea Salt2 c. Maple Syrup
  8. or possibly
  9. 10 c. Water1 c. Sugar1/2 c. Sea salt12 juniper berries12 cloves12 black peppercorns3 bay leaves
