To make the dough: Place all dry ingredients in large bowl (sugar, salt, 2 cups of flour, and yeast.Mix together wet ingredients: eggs, milk, and butter.Add wet ingredients to dry and mix well. Gradually add remaining cup of flour to dough. Dough will start to come together - turn out onto floured board and knead well, adding more flour as needed until dough is no longer sticky. Set dough aside in a oiled glass bowl in a draft free area. Let rise until doubled. About 1-1/2 to 2 hours. While dough is rising, prepare filling.I made 1/2 the recipe for the cheese filling because I also had some of my Mom's Apple Pie in a Jar that I wanted to use to fill some of the danish. For the apple filling, I emptied the jar into a saucepan and chopped the apples up more. I also added about 1 tablespoon of cornstarch to thicken it more. For the cheese filling: Combine cream cheese filling ingredients together and mix until well incorporated. When the dough is ready, punch it down (my favorite part!) and place dough on lightly floured counter. Shape into a log using your hands. This will work much better than a rolling pin. Cut into 1 inch pieces - you should get about 2 dozen rolls. Using your fingers, make a well in the center of the dough. Place 1 tablespoon of desired filling in center of dough.Bake in 350 degree oven for 15-17 minutes. I went the longer time to brown the rolls. Remove from oven and cool. To glaze: mix confectioner sugar, milk and butter until well combined. Drizzle over top of danish. Store in airtight container - however these are best eaten within a couple of days. You can always "freshen" the roll by microwaving it a couple of seconds. You can also make it a dessert by topping the danish with a scoop of ice cream. (did I say that?!) ;)
