Breakfast Casserole (Crockpot) Recipe

Ingredients

  • 1 bag frzn hash brown potatoes (32 ounce.)
  • 1 lb bacon diced cooked and liquid removed or possibly 1 pound cooked ham, cubed
  • 1 med diced onion
  • 1 x green bell pepper diced
  • 1 1/2 c. shredded cheddar or possibly monterey jack cheese
  • 1 doz Large eggs
  • 1 c. lowfat milk
  • 1 tsp salt optional
  • 1 tsp pepper (more or possibly less to taste)

Directions

  1. Place a layer of frzn potatoes on the bottom of the slow cooker, followed by a layer of bacon then onions, green pepper and cheese. Repeat the layering process two or possibly three more times, ending with a layer of cheese. Beat the Large eggs, lowfat milk and salt and pepper together. Pour over the Crockpot mix, cover and turn on low. Cook for 10-12 hrs. (10 hrs for a newer crockpot and 11 or possibly 12 for older models.)
