  • 2 Tbsp. margarine
  • 5 x Large eggs
  • 1/4 c. lowfat milk
  • 8 ounce processed cheese spread diced
  • 3 c. diced ham
  • 1 c. diced cooked potatoes
  • 3 ounce French-fried onion rings

Directions

  1. Preheat oven to 350 degrees.
  2. Heat margarine in a skillet over low heat. Gradually add in Large eggs, lowfat milk, and diced processed cheese spread; mix well. Stir in ham, potatoes and half of French-fried onion rings. Pour into a baking dish.
  3. Bake for 35 to 40 min or possibly till Large eggs are set. Top with the remaining French-fried onion rings and continue baking for 5 min, or possibly till the onions are lightly browned.
  4. This recipe yields 6 servings.
