Ingredients
- 1 can Condensed lowfat milk
- 1/3 c. Lowfat milk
- 1/2 c. Flaked coconut
- 6 x Very hard bananas, cut lengthwise
- 3 c. Cornflake crumbs
- 2 x Chickens, cut in pcs
- 3/4 c. Butter or possibly margarine(divided in two, melted portions)
- 1/4 c. Lemon juice
- Â Â Sliced starfruit and kiwi fruit, optional
Directions
- In food processor, blend the condensed lowfat milk, lowfat milk,coconut, and lemon juice till smooth. Pour into a bowl. Dip bananas into lowfat milk mix; roll in the cornflakes and set aside. Dip chicken into remaining lowfat milk mix; roll in the remaining cornflakes and place in two greased 13-inch by 2-inch baking pans. Sprinkle with 1/2 c. of the melted butter. Bake, uncovered, at 350 degress for 1 hour. Arrange bananas over the chicken. Sprinkle with the remaining butter. Bake 15 min longer or possibly till chicken juices run clear.
- Garnish with starfruit and kiwi if you like.
