Ingredients

  • 1/3 c. extra-virgin extra virgin olive oil divided
  • 6 x plum tomatoes roughly minced
  • 10 x pitted black olives roughly minced
  • 6 x fresh basil leaves
  • 1 Tbsp. capers rinsed
  • 3 1/2 ounce sweet white anchovy filets see * Note
  • 3 x garlic cloves crushed
  • 1/2 lb cherry tomatoes minced
  • 2 Tbsp. minced parsley
  • 1 dsh salt Freshly-grnd black pepper to taste

Directions

  1. Note: Sweet white anchovy filets, fresh anchovies which are briefly cured so they have a mild flavor, are sold at gourmet markets.
  2. Place half the extra virgin olive oil, the plum tomatoes, olives, basil, capers, anchovies, garlic, cherry tomatoes and parsley in the bowl of a food processor and pulse till finely minced, but not smooth, about 10 seconds. Season to taste with salt and pepper.
  3. Pour into a serving dish, then drizzle with the remaining extra virgin olive oil. Let stand for 1 hour before serving. Serve with fresh crusty bread.
