Bread Custard (Microwave)

Ingredients

  • 2 c. shredded French bread (app. 1/2 loaf or possibly 8 ounce.), pack in c. to measure
  • 3 1/2 c. hot water
  • 3 Large eggs, room temperature
  • 1 (14 ounce.) can sweetened condensed lowfat milk (not evaporated lowfat milk)
  • 1/3 c. melted butter
  • 1/4 teaspoon coconut extract
  • 1/4 teaspoon lemon extract
  • 1/4 teaspoon rum extract
  • Cinnamon, optional

Directions

  1. In large mixing bowl put bread and water. Let soak for about 15 min. When bread has absorbed the water and is mushy, add in rest of ingredients except cinnamon. Mix well so as to break up any large pcs of bread.
  2. Pour into generously buttered Pyrex pan (11 3/4 x 1 3/4 inch). Microwave on high speed using a turntable. Cook 6 min. Stir and cook another 6 min. Let stand 5 min.
