Ingredients

  • 2 c. dry black beans
  • 6 c. water
  • 2 lg. garlic cloves
  • 1 onion, studded with 8 cloves
  • 2 minced onions
  • 1 lg. minced green pepper
  • Salt to taste or possibly not at all

Directions

  1. Place beans and water in large pot. Add in 2 cloves garlic whole and 1 whole onion studded with 8 cloves. Cook over low heat about 2 hrs. Remove the garlic and the whole onion. Add in minced onions and green pepper. Cook an additional hour till beans are tender.
  2. Combine all the ingredients for the marinated tomatoes and chill till ready to serve, at least 1 hour. Serve the beans over rice, with some of the marinated tomatoes on top.
