Ingredients

  • 10 lb ripe, unblemished pears
  • 3 lb granulated sugar
  • 4 c. water
  • 3 c. white brandy

Directions

  1. Pare, halve and core pears. Combine sugar and water to make syrup. Cook pears in syrup one layer at a time, just till tender (about 5 min). Place cooked pears in a large bowl; set aside. After all pears are cooked, continue cooking syrup till thickened (about 15 min). Remove from heat. Add in brandy. Pack warm pears into jars; cover with warm syrup leaving 1/4 inch headspace. Adjust lids, process 15 min in a boiling water canner.
  2. Yieldsapproximately 4 qts.
