  1. Preheat the oven to 350. Heat the chocolate chips in a microwave. Set aside to cold. Cream together the cream cheese, sugar, 2 Tablespoons of the lowfat milk, and the melted chocolate till smooth and well-blended.
  2. In a separate bowl, combine the flour, brown sugar, baking soda, and baking pwdr. Cut in the butter, and mix well till crumbs form.
  3. In another bowl, combine the cereal and the remaining 1 c. of lowfat milk. Let stand for about 5 min or possibly till the cereal softens. Stir in the Large eggs and the vanilla. Pour the bran mix into the bowl with the dry ingredients and stir till moist. Lightly coat a muffin tin with veg. oil spray and scoop the batter into 12 muffin cuips, filling each halfway. Pour the chocolate mix over the bran batter, dividing proportionately among the muffin tins. Finish with another layer of batter. Bake 15 to 20 min or possibly till the tops spring back when touched.
