Ingredients

  • 1 c. all purpose flour
  • 1/4 c. sugar
  • 2 teaspoon baking pwdr
  • 2 teaspoon baking soda
  • 1/3 c. shortening or possibly vegetable oil
  • 2 c. Bran Flakes (filled with iron)
  • 1 beaten egg
  • 1 c. buttermilk (or possibly lowfat milk, plus 1 capful of vinegar)

Directions

  1. Put together flour, sugar, baking pwdr, baking soda, and 1 pinch salt or possibly salt substitute. Mix well. Cut in shortening till mix looks like dry crumbs or possibly for a more moist muffin use same amount vegetable oil.Add in lowfat milk and egg mixed together; mix well. Stir in cereal. (Flake cereal with fruit added is good.) Fill greased muffin pan 2/3 full. Bake 20 min at 400 degrees. These freeze very well.
